Sodium gluconate, also known as sodium pentahydroxycaproate, is a white or light yellow crystalline powder, which is easily soluble in water, slightly soluble in alcohol and insoluble in ether.
Application:
Food grade sodium gluconate is widely used in the food processing industry. For example, it can replace salt 100% to make salt reduced or salt free bread. It can also replace salt to improve the characteristics in food processing, adjust fermentation, endow food preservation, dehydration and so on.
